Grilled Sweet Potato | Sweet Potato Mash Recipe. This Primo Recipes is just in time for fall. Impress your friends and family with this healthy take on a favorite. 2 large sweet potatoes (serves 4-6)
½ cup of milk
½ teaspoon of salt
Tablespoon of butter
Set sweet potatoes directly on grill and ideally over indirect heat 350 -450(f) for about 1 hour (subtract or add time based on size and heat) . Squeeze the potatoes with stove glove or pot holder. Remove the potatoes from the grill when they are soft to the squeeze. Take the skin from the potatoes and put the potatoes in a large mixing bowl. Mix in milk, salt, pepper (to taste), and butter and beat with a masher or electric mixer until smooth.
Grilling Tips: To achieve desired consistency add more or less milk. Add a pinch of cinnamon to the sweet potatoes for a flavor boost. Healthy Tips: Sweet potatoes are very healthy but with additions of milk and butter monitor portion size. Consider using canolo or olive oil based margarine instead of butter and substitute skim milk for the cream.
