Pizza on the Grill | Primo | BBQ Pizza Recipe
Set Grill for direct cooking (no heat deflector plates) and heat to 400 degrees (f) with primo pizza stone directly on grill.
On a big cutting board or pizza board sprinkle Semolina. Put the dough onto the board. With olive oil, brush the top of the pizza dough. Next, add desired amount of sauce. Finely chop fresh oregano and basil and place on top of the sauce. Next, add any desired extra toppings and mozzarelloa cheese to the pizza. Finely, add freshly grated parmesan cheese to the top of the pizza.
Sprinkle some semolina on the Primo Pizza Stone. Carefully put pizza onto the stone and close the grill. Grill for about 10 minutes or until golden brown on the bottom of the pizza. Remember to check the pizza after 5 minutes and then every couple of minutes until the pizza is done. Use a pizza board or pizza spatula to lift up pizza to check the bottom, when checking for doneness.
For a scrumptious wood fired tasting pizza, add some pieces of hickory and mesquite wood when starting the grill. Once the grill is about 300 (f), place the pizza stone on the grill while it is warming. Note, if the semolina burns right off when you sprinkle it on the pizza stone the stone is too hot to cook on and you need to take the stone off. Caution use pot holders when removing the stone and back off the temperature of the grill. Then place the stone back on the grill for 5 minutes and sprinkle with semolina again.
Semolina can be a challenge to find, but by checking at a few of your local stores you should be able to find it.
